Does anyone know what mąka krupczatka is in English (I'm looking for an American counterpart if it exists) and if it's the same as mąka tortowa, and if so, would it be the same as pastry/cake flour. Thanks! |

Right on! According to the polish standard PN-A-74022:2003, "krupczatka" aka "tortowa" is a low ash (<0.5%) pastry flour. http://pl.wikipedia.org/wiki/M%C4%85ka |
