This XXX is meant as a substitute for a name and/or title you're going to use in your letter depending on whom you're writing to.

Dear Sirs,
use this when you're writing to a group of people whom you don't know;

Dear Madam or Sir, or
Dear Madam/Sir,
use this when writing to a person and you don't know if it's a male or female;

Dear Sir,
use this when writing a letter to a person (presumable a man but not necessarily) whom you're unfamiliar with;

Dear Madam,
use this when writing a letter to unfamiliar female addressee;

Dear Mr. Prezes,
use this when you know the person's surname whom you're writing to;

Dear Mrs. Smith,
use this when you know that the addressee is a married woman;

Dear Miss. Smith,
use this before a surname of a woman who has never been married;

Dear Ms. Smith,
use this before a surname of a woman who you do not know if she was or not married;
Note you may use or not the period after the above titles, so
Mr would be as correct as
Mr. and usually you should write person's surname after the title.
